A total shot in the dark but...
I had similar issues at one point when creating lineups on the lineups/depth chart page and the problems went away when I unchecked the "Auto-sync Lineups & Dept Charts' tick box. I believe the issue I was having has been fixed.
I wouldn't expect that to affect the 7-day lineups page but you never know and it might be worth making sure that is unchecked to see if it changes the behavior you are seeing.
