You can also set up historical players without recalc, and let the OOTP development engine take hold. So you might end up with Adam Jones who hits 50 HR a year and breaks the record, or you might get an Adam Jones who never makes it to the majors. Or, as mentioned, you can use the recalc options if you want him to progress like he did in real life. Really depends how you want to play it out.
And obviously if you play historical and know players' real life stats, that gives you an edge. But they won't always play to their talents, and there's always things that can come up that can "change history" if you want to play that way.
