What skills are important for HC's, Player Management seems like the obvious choice. And perhaps decent scouting ratings too, maybe offensive and defensive skills will make them actually good at producing results?

Scouting and player management are actually more relevant to general managers. The offensive, defensive, physical, and positional ratings are the most important individual ratings for coaches right now, as they affect player development. Tactical differences between coaches are mainly limited to preferences at the moment, there's no difference in, for example, line-matching abilities between individual coaches.
