Visit this site to see overhead diagrams of every major league park from the 20th century onwards. This includes diagrams at different points in a park's history (since many of early parks were reconstructed more than once).

The deepest center fields appear to be the 483 feet of the Polo Grounds (in its 1923 configuration) and the 490+ feet of Yankee Stadium (in its configurations prior to 1938).
