I have very successfully converted a C to a SP, and position players to Ps and vice versa. I look at players in the draft to see who has ratings that could make decent performers at secondary positions. Then I will draft these guys and switch their positions.

I have also had decent luck looking for young free agents who my scout says has good overall potential but doesn't seem to have the ratings to justify that optimism. Often (but by no means always) switching these guys from pitching to a position or position to pitching produces a decent prospect for me.

Sometimes the AI plugs a prospect into a position because it needs him there, then cuts him without giving him a shot at his natural position. If you look, you can find these guys and give them a second chance.
