You'd have to gather all the stats from an online source, export the stats from the game, then load the exported stat files as .csv's in excel or OO, then sort the updated stats to the same format as OOTP uses, add them to the OOTP stats files, link each record line to the player id from the OOTP db and import the stats again.

You're talking about a good 10 hours or so of work, much more if you want to update milb stats.
Not to mention you'd have to start on Opening Day, sim to June without allowing any roster moves, transactions, or injuries, and THEN do all that, and THEN re-allow roster moves. That'd all be some serious dedication.
