I think this is 2 questions, so I will answer 2 questions. Feel free to follow up if I don't understand.
When I decide to trade a pitcher, I am looking at a lot of things including performance (stats). I also consider age, contract situation, his desired role vs. what I have to offer, and - as veteran readers can attest - sometimes even his name and facegen picture.
When I decide to assign roles, such as swingman/long relief vs. starting rotation or closer vs. middle relief, I look at number of pitches (but not kind), stamina, stuff, and some key stats like GB%, K/BB ratio, and K/9. I like to put my sixth starter in the bullpen even if he doesn't fit there in order to have an emergency starter for injuries or extra-inning marathons.
