This is my advice and just my opinion, so please take it as only that. OOTP is an incredible game and the historical replay aspect of the game has improved immensely through the years. But, keep in mind it is a career sim and for that reason, it may not always produce the most accurate individual season stats. If you are willing to be patient and look at players from a career standpoint, I think you will be very pleased by the results OOTP produces.

Oh and if you really want to have a blast. Do the same type of league you're planning, but turn recalc off and leave development on. Dial down talent change randomness a little. The "whatif" aspect of playing this way is a blast.
This is a great answer. Regarding the 3-year recalc, I would add (although this might be obvious) that this has the effect of smoothing over a year in which a player might've had an off-year due to, say, injuries (or drugs or apathy or whatever). For some reason I always think of Bills Buckner and Russell on the 1975 Dodgers. So, in this example, if you are in 1975 then Buckner's and Russell's poor years (in reality) will be somewhat mitigated (in OOTP's ratings) by the fact that they had decent 1974 and 1976 seasons. If you are in 1974 or 1976, though, their ratings will be somewhat negatively affected due to their poor, injury-plaged 1975 seasons.

It is not possible to play 1) using real transactions, 2) choosing options to have players NOT retire according to history and NOT miss seasons according to history, and 3) getting the intended transactional results. This is due to a change (starting with the OOTP version 13 real transactions file) described in more detail here: http://www.ootpdevelopments.com/boar...e-problem.html. Hopefully this will be addressed in version 15.
