Players can have ratings above the max. In "Global Setup" under the Rating Scales section, there is an option to "Show Ratings > Max". It's off by default. Also, in the editor you can see ratings go up to 250, but I believe anything over 200 falls in the > Max category and won't be seen unless this option selected.
Right below that is another option for "Show Potential < Actual" which is why the curveball potential is lower than the actual. This one is also off by default.
