Often I have found that, when a player has a ridiculous demand listed, if you enter the screen to actually offer a contract, his demand is lowered than it is on the player screen and the free agent list screen. But, not always. Some players, just like other humans, can be too unreasonable and too greedy.
You can also try offering a contract at lower that when he's demanding and negotiate a deal that is less than whatever his demand is. Just don't lowball him too much that you make him decide to cut off all further talks with you.
