I've developed a Starting Pitcher with great hitting ability in one of my leagues. I just kept letting him pitch in the minors, and his hitting ability developed despite getting little to no time at the plate in the minors. He wasn't enough of a fielder that the lack of playing time at one of the 8 non-P defensive positions was an issue for me, so this might work for you if you just want to use him as a DH occasionally. From what I've seen, there is no need to do so.

This may have been changed in a recent patch (not that I recall seeing anything to that effect), and it may not work with position players developing pitching ratings (it probably shouldn't), but it's worked for me with pitchers still developing their hitting talents.
