I play each game, but do half an inning at a time basically just so I can manage pitcher subs...if I need to rest my bullpen I may play pitch by pitch or single pitch for 6, 7th or 8th inning so I can watch how my pitcher is doing...but I seldom do this. On occasion I may throw in a PH. I find doing half-innings a game may only take 2-3 minutes to complete, and adds to the immersion.
I enjoy going through my minor league rosters every game month or so to see who needs promotion, demotion or more games under their belt. I spend a good amount of my game time messing with rosters (major and minor). I also keep a close eye on my batting lineup and pitching rotation to keep it humming at peak efficiency (with what success...thats questionable).
