You've got the procedure correct almost. Replace the trophy.png with your new one in the skin your using\images folder and then rename the skin.bin to old skin.bin. Restart the game and the skin will be rebuilt and you'll have your new trophy pic. but that image above won't work as it's a jpg and the trophy image needs to be a png image or it won't show.
