For me i just loaded the latest patched mlb quickstart and ethier setting the draft for that day r deleteing all players so only the hidden draft class remains i've found a few that are around 28 years old. If its not too many you could edit them.
There is a bug that has been reported to do with the draft issue.
Should be addressed with next update
(specifically to do with the very large ammount of International players in the draft...which is where your "young" players are coming from)
