Same goes for your 2nd question. Once you start the game, you can go into the league setup and select "Release all players & schedule inaugural draft", which is the same as a fantasy draft.

and if you want real players in Nippon, Cuba etc. look for rosters where these league were created as templates then you can add those to your 2011 league as well.
