I'm certainly not a ratings guru. There is nothing in the game that let's you designate one fighter a bodypuncher and another a headhunter. Even Muhammad Ali, a notorious headhunter, throws more body punches in the game than would be his norm. A Joe Frazier or Mike McCallum will throw more punches to the head in the game than would be the case in real life. A reasonable fascimile of a bodyhunter might be to style the fighter as a Slugger, have the fighter's control factors be more effective against boxers than sluggers, give the fighter a high Aggressiveness rating, give the fighter more clinch numbers than ring movement numbers and make the fighter more proficient fighting inside than when using any other strategy. The quality of the fighter can thus be adjusted to the level you seek using the other rating categories. Prominent ones would be CF factors, Endurance, Punches Landed, Punches Missed, Hitting Power, % of 3 point punches, Defense and Fast/Slow Starter. The ratings in the game do not isolate hand speed or foot speed as much as make them elements of certain more general ratings. I don't know if this helps but this is how I would approach styling a bodyhunter.
