Strange. You have a 2. Generation iPod Touch which we not officially support BUT I heard nothing like that from other user. Did you try a new, clean install from iOOTP and reboot your device:
Reboot device
Memory is critical on the old devices BUT as far as I tested it (and so far we had no complains from user with older devices) it should work.
