Through many editions now (maybe all of them?), this game has had difficulty with simulating the first season of a new 'dynasty'. Generally, if you stick with a game through multiple seasons the second and subsequent will hew much more closely to the production line you are expecting.
Yes, there are ways to sim the first season, adjust what you think needs adjusting, then go back through and play it out 'for real' and get numbers that make you happier than you'll get 'out of the box', but you'll have to ask someone else the procedures.
