It can get annoying when you don't get the shade you want, heh. Here's some tips and tricks that I use:
There are four sliders that control the overall skin colour. The first one makes the skin dark/light, which is important, but the other three below it are what you need to play with in this case.
I usually use the "purple/yellow" one the most until I get the desired skin shade, and since those four are synchronized to a degree, you can usually achieve the results you want in conjunction with the dark/light slider. It's really a matter of trial and error, along with patience, to get what you want.
That's why the picture is so important, because if you get a bad one... oi, you really have to play with it.
In this case, took me ten minutes to get the skin shade right, and then a few minutes more with the beard. The Modeller program really needs to add a "hair colour" slider.
