If you set the button in the lower right corner so it reads "switch to one-pitch mode" you can play one pitch by hitting enter or spacebar but at the times I want to control things more I can use the number keys to bunt up to a certain count or take a pitch etc. doing it one pitch at a time. When pitching I can hold the runner on some counts and maybe not on others or throw to first etc. It doesn't take much longer to play out a game doing it this way and I get more control.

Yea, I guess I play a hybrid game now too, especially on steals and hit-and-run, and I guess I should start doing it on bunts too, but I don't want to start doing pickoff attempts and holding runners, that seems like it will slow things down considerably.
