Using the season replay mode, stats are usually pretty accurate, especially leaguewide. If you use the comparison tool for sim results vs. real life, the league totals are usually within a normal margin of error in most categories.

You will still see some variations in individual performances, though. Overall things are fairly consistent, and the best players in various categories in real life will tend to be among the best in those categories in OOTP. But you will usually see some significant variations in every season that you play. This is an area of the game that needs continual improvement, although it seems to get better with each release. And I think it has with this one.
