I would thing that those health ratings would require Markus to compeltely reprogram how injuries are determined in the game. Right now I believe it's random, whereas something like you're suggesting would imply a long-term chance of injury. So a player might be susceptible to injuries, and that might be detected in advance but resolve itself later.
I think your suggestions are realistic, but they might be a bit of a stretch for incorporating into a sim like OOTP. But there's nothing wrong with asking for the feature. If enough people like this and want it, then I'm sure Markus would consider it.
