I'll take a stab at this for you...
To start as the Giants, at least what I'd do is enable commissioner mode, look for available jobs and select San Francisco, then disable commissioner mode if you wish.

I'm not sure what you mean by selecting a manager.

Using the default values leads to statistics that are realistic and believable to me.
