The AI plays infielders there because they are properly rated to play there. The issue isn't that they are played, but that left-handers are generated with the ability to play those positions.
I know that there have been numerous requests made to change this by a few people who are bothered by it. I do not know if there are plans to change it for the upcoming version, but it is definitely a known situation.
