The two Spurs games you quote are certainly the last classic finals in my book, although the Manchester City game sticks out in my mind more for my little sister having a go at me because Worzel Gummidge was cancelled to make way for extra time... somehow in her little mind this became my fault
Chelsea Leeds stands out in my mind, but it is also one of my earliest clear non-United football memories. I also have very find memories of Wimbledon's triumph in 88 although no so much for the match. It had the feeling of a watershed going into the match with the threat of the breakaway league, increasing imbalance in the league and money steadily becoming a factor in the game. Liverpool completing a second double would have felt like a nail in the coffin. Wimbledon saved the dream that day, but sadly they only delayed the inevitable.
