Yes the multi-talented players can occur, but do so very rarely.

You can teach the pitcher a position in the minors while still having him in the rotation. With strategic use of when to swith the "primary" position you might be able to get the guy to pitch some days and play the field others.

Keep in mind realistically in the majors if they were going to do something like this the player would still likely get the day off after his start to rest his arm and the other days would likely be a 1B or DH.
