Hey man,
I actually use photoshop CS2 to work on my unis and logos. I've never used gimp though, so I'm at a loss here. I know there are some others here that use it. You might want to post a question thread on it.
As far as a lot of the team names on the jerseys. I use Adobe Illustrator a lot to create the text and then copy and paste it into my photoshop template. Others are just images of actual team script logos which I re-size and plop on to the front of the jersey.
Great job on you first uni! Its very addicting!
