Well, apart from the obvious (restoring from a backup or restarting the league from a template), I'm afraid I don't have much to offer.
You could try filling the minor leagues with fictional players, to see if that gets you past the illegal # of players issue. But, that's probably not going to help you if your schedule is hosed.
