Sorry I can't recall what I did (don't have the file with me). I either set all players to their actual MLB debut age or made everyone the same age.
Yes, the league settings can be adjusted to your liking. Again, I don't remember what the default is, but if you want more or less offense than you can just adjust the league modifiers. I generally test sim a few seasons to see if I like the results (copy the lg file first).
