Create a league using the real players and all teams then use the "reset, release all, draft command from the drop down menu in the league setup. Then edit league structure and delete all but 8 teams. If you want to have playoffs then you must have 2 "leagues" in the setup. Then draft the players on to the teams that you need. Not sure if you want to delete the rest of the players or leave them in the FA pool. If you keep them the make sure to have all teams set to human ownership, otherwise they will begin signing the remaining free agents.
