After playing with many different settings I have found that the video memory setting on Virtual PC needs to be set as high as possible. Even with that I experienced frequent crashes.
I have installed Season Ticket Baseball and it has never crashed with the same setup. I am not sure what would be different from the 2 versions that causes issues with stability.
Your best option may be to wait for OOTP4.
