Solved it! I figured it was something on my end....

Solved it! I figured it was something on my end. My graphics were disabled! No idea how that happened! Thank you! I think I just needed to talk through it with someone.

Right. The problem isn’t really with finding the save game folder. It’s that after I download a patch, if I open the game, it loads the installation bar and finishes the install, which is fine....

It doesn’t delete it. It starts loading from a different save folder, and the old one disappears. Then, every time a new patch comes out it reverts back to the original save folder until I restart...
