Update: this seems to resolve itself -- when I downloaded the next PT simulation, the option to change him back to a pitcher appeared again. Odd that it wouldn't let me change it at first, though.

In Perfect Team, I right-clicked on a starting pitcher, expecting to be able to make him a reliever....
