Is it possible to sim forward more than one day? It's pretty boring having to sim day-by-day...

Yes, but not in the 'Path to Glory Mode'.

That's specifically designed to sim day by day and recreate a real management experience as much as possible.

If you want to fast sim, then start a game in the 'Sandbox' mode and you'll be able to do so to whatever extent you want.
